What does delighting a texture mean?
Delighting removes lighting information captured in an image so the albedo represents surface color more closely and responds naturally to lights in a 3D scene.
Will delighting remove every shadow?
Results depend on the source. Soft illumination gradients are usually easier to remove than hard occlusion, glossy reflections, or clipped highlights.
Should I delight before making a normal map?
Not always. A softly lit source with gentle shadow can give the normal model useful clues about surface shape. Generate the normal map from the best softly lit source, then use delighting separately to create a more neutral albedo. Hard shadows and clipped highlights should still be avoided.
